Moist Banana Bread With Cream Cheese Frosting

The holiday season is here, and it’s all about baking tasty treats and making delicious food for yourself or loved ones.  Baking is fun, and when you include your children to assist, it is even better.  As I got ready for work one morning, I realized that I had several bananas that were overly ripe and I thought, why not make some Banana Bread from scratch.  I love cooking, and I like to dabble in baking at times although it’s not my strong point.  Sometimes my recipes don’t come out the way they should.  So, if you not a committed baker like me, don’t worry, you will get better as you try baking new items on occasion.

Even though I am not an avid baker, my Banana Bread came out moist and delicious. I was pleased with my result.  When I added the Cream Cheese Frosting, WOW, it was even better!  This recipe is simple and easy to make.  You can save some time by preparing your ingredients-beforehand.

Having fun while making this recipe, and you can make for any occasion such as, a potluck at work, Thanksgiving, Christmas, or whatever reasons you choose.

Have all ingredients at room temperature before starting, and this will allow the ingredients to blend in well.

Cook time: 45 minutes

Total time: 1 hour 15 minutes

Serves: 4 people

INGREDIENTS for the Banana Bread:

  • 3 Ripe bananas (the skins should be dark or spotty brown)
  • 2 Cups all-purpose flour
  • 1 Teaspoon baking powder
  • 1 Teaspoon baking soda
  • 2 Teaspoon cinnamon
  • ½ Cup brown sugar
  • ½ Teaspoon salt
  • 10 Tablespoon of butter
  • 2 Eggs (medium size beat)
  • 1 ½ Teaspoon vanilla extract
  • ½ Cup milk
  • 1 Tablespoon almond butter (optional)

INGREDIENTS for Cream Cheese Frosting:

  • 3 Cups Philadelphia original cream cheese
  • 4 Cups powder sugar
  • ½ Cup milk (add more if needed)
  • 1 ½ Teaspoon vanilla extract

INSTRUCTIONS:  Banana Bread

  1. Preheat oven to 325
  2. Spray or flour your loaf or muffin pan
  3. In a bowl, mash bananas until all chunks are gone,
  4. Add eggs, milk, sugar, butter, almond butter, vanilla extract into the banana mix, stir everything together with a spatula and set aside
  5. In a large bowl, sift flour, add baking soda, baking powder, cinnamon, and salt
  6. Combine wet mixture to dry mixture
  7. Stir with the spatula until all the flour is dissolved into the wet mix. DO NOT OVER MIXED.
  8. Bake on the oven for 45 minutes, check at the 35 minutes mark with a toothpick or knife in the center. Either item should come out clean and bread should be golden on top.  Take out the oven when ready and set aside for cooling.
  9. Leave whole or slice, pour the cream cheese frosting over and serve

INSTRUCTIONS:  Cream Cheese Frosting

  1. Add cream cheese into a medium bowl blend it until in it smooth and set aside
  2. Add powder sugar, milk, and vanilla extract into a medium bowl and mix until a smooth texture is displayed.
  3. Mix the powder sugar mixture into the cream cheese and fold over with a spatula.

NOTES:

*The amount of milk added will determine the consistency.  Less milk for a thicker frosting

*Cooking times will vary depending on the oven use.

*Check on the bread 35 minutes before finish time.

*Add any toppings as desired.

    Thanks for the recipe. I will definitely try this one out soon. I love baking but I never have attempted to nor had a request to make banana bread. I love it though. As a baker I love the little notes that you provided because I also provide them as well when I provide someone with my recipes. I will let you know how mine comes out real soon.
