
Homemade Delicious Potpie
Eating healthy is extremely important to maintain a healthy lifestyle. There are many food options that are presented to you and me on a daily.
The convenience of fast food options that you have are great when you are busy with work, kids, school, and all other things in between. But the fast food that you consume on a regular is tasty, but these types of food leave you feeling bloated, sleepy and hungry again in less than two hours.
So why not make a dish that provides you will all of your required nutrition, taste great, healthy and fulfilling. Try my recipe below to get a quality home cooked meal that you can have for couple days and you get to save some money along with maintaining a healthy lifestyle.
This recipe does not call for many ingredients or for you to be in the kitchen for too long. Here are the things you will need to get started.
I have been cooking for a while so I eyeball my measurements a lot, this recipe serves four.

Ingredients Required:
– 4 Fresh Medium Carrots
– Fresh Greens (1 bundle)
– 4 Medium Fresh Sweet Potatoes
– 4 Medium Fresh Potatoes
– 2 Celery Sticks
– 1 Onion (chopped)
– 1 Cup Mixed Vegetables
– Biscuit Dough (Your favorite)
– 3 Cups Almond Milk
– 2 Cups Water
– 1/4 Cup Flour
– 6 Tablespoons Olive oil
– Fresh Thyme
– 1/2 teaspoon Garlic powder
– 1/2 teaspoon Basil
– Salt
– Pepper

Step 1. Put a medium pot filled with water on top of the stove under medium heat. Add a tablespoon of salt or none of you prefer
Step 2. Peeled and chopped potatoes
Step 3. Sliced carrots, onions, celery and chopped green
Step 4. Let the water come to a boil and add the potatoes. Then let it boil for 15 minutes and add the carrots for 5 minutes.
When done, drain and set aside. Save some of the liquid from the boiled vegetables.
Step 5. Grab your sauce and set your stove to medium heat. Add your oil (3 tablespoons) and sauté your onions, celery, mix vegetables, and greens. Add your herbs and spices and cook it for 10 minutes and put aside for later.
Now it time to make your rough. This is a simple process, but the key to whisk the flour into the milk vigorously.
Step 6. Have your pot on medium heat, add 3 tablespoons of oil and your flour and whisk until everything is blended in and smooth.
Next, add your milk and whisk briskly to prevent lumps from occurring. Then add your water to reduce the thickness.
Add your spices for flavor and let it simmer for 10 minutes
After the 10 minutes are up, add you’re boiled and sauté vegetables into the rough, stir and let it simmer for another 8 to 10 minutes. (Add more spices if needed)
Step 7. Take your biscuits and lay them on plastic, add olive oil on to and press down with hands to make flat.

Step 8. Pick your dish and pour the vegetable mix into it, place the biscuits on top and bake it in the oven at 350 for 20 minutes. When your biscuits have a lovely golden-brown color on , then there are ready.
Bonus
You can enjoy this with a salad or a tasty bake Salmon as the picture below. If you want to make it’s all you need is fresh Salmon, herbs, olive oil and bake it for 8 to 10 minutes.

I absolutely love pot pies. I used to love getting these at the grocery store when I was little. I still eat them today however I’ve never tried to make my own. I will definitely try the recipe that you provided. The pictures look great. I think that it is a pretty healthy dish; packed with vegetables.
